Grinding hard-to-freeze foodFreeze-grinding of Food Ingredients
Freeze Drying and Grinding of Plums.
Our unique freeze-grinding equipment using liquid nitrogen is capable of not only maintaining ingredients at low temperatures, but also cooling the entire grinding system by removing the heat generated by the vibration in the grinding process. This makes it possible to grind highly viscous food and hard-to-freeze food such as dried plums and dates.
Achievements
Dried plums are a specialty of Wakayama Prefecture, where Hieda Chemical Industries is located. Due to its high salt content, dried plum tends to melt during the grinding process. Our technology has enabled to grind plums into small particles while maintaining their moisture by freeze-grinding, not by freeze-drying.
Dried dates are very popular as a nutritional superfood. However, due to their high sugar content, they are hard to freeze. Our technology, however, makes their grinding possible, something that is rarely seen in Japan.
